Chuckanut focuses on German style lagers and is located in Bellingham, Washington, USA, while Kyoto Brewing Co. is located in Kyoto and focuses on Belgian and American style beers. However, the opportunity arose out of a connection between Chris and Chuckanut brewer Jeff \"Catfish\" Dionne. Catfish lived in nearby Kobe for 13 years before moving back to the USA to take a job at Chuckanut. During his time in Japan, he and Chris were both heavily involved in the beer scene in Kansai, at one point even meeting up to discuss potentially opening a brewery together. While the idea never materialized, both of them wound up realizing their dreams in the brewing industry, albeit on different continents.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe idea for the beer grew out of the desire to combine the elements that each brewery is known for while also trying something that was new to both parties. The natural choice was combining the malt bill a German lager with a Belgian yeast strain. The \"something new\" came in the form of two varieties of French hops, Aramis and Triskel, that neither brewery had used before.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe result is an easy drinking Belgian ale that feels like the conjunction of a Weizen and a Belgian Golden ale. The aroma is heavily fruity, dominated by banana, spice, and berries, while the body is full and rich with an almost honey-like sweetness. The malt bill and the yeast worked well to ensure the beer finished quite dry, so the sweetness doesn't feel heavy or cloying. We think you will agree that you can taste the strengths of both breweries in this beer, even though it isn't one that either brewery would have made alone!\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tRegarding the name: Historically, collaborations with Chuckanut Brewery usually have the beer name ending in \"nut\". As our own naming convention has our beers named in Japanese, we decided to use the word 'natsu' (meaning summer) as our base. In Japan, this proves very difficult as the majority of growing and processing facilities for beer ingredients are owned, operated, and strictly controlled by large breweries that have little to no interest in sharing their harvest with competitors, no matter how small. Our only option we felt was to start our own growing programs at some point in the future, beginning with hops as they require the least amount of additional processing prior to use.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tAs we began to meet more and more people in Kyoto interested in craft beer, we were introduced to the town of Yosano in northern Kyoto. Inspired by a local resident heavily involved with the beer community in Japan, Yosano has taken the bold step of starting Japan's first hop farm for craft brewers. While still in its infancy, the program's goals are promising and we were fortunate enough to receive a portion of the very first harvest for use in one of our brews.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tWe decided to use the freshly picked hops in a beer that showcases a balance of light malt and yeast character to see how the hops balanced with other ingredients. The Welsh flag is emblazoned with a red dragon, and the mythical beast is featured heavily in Japan's folklore. For locals and visitors alike, the Kamo can serve many purposes. At times It can be a place to exercise or bird watch, play a game of bocce ball, have a picnic, or take a date. For many, though, it is a place to simply relax, collect one's thoughts, and enjoy the moment.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tMuch the same can be said about Kamogawa Cafe, a small cafe near the banks of the river run by the endearing Dai-chan. While many cafes roast their own beans, Dai-chan does so in a slightly different style. He forgoes the use of complicated roasting machines with fine tuned timers and dials in favour of a hand cranked stove-top roaster that fits a mere 1000g of beans at a time.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe roasting is the near definition of \"handmade,\" and he spent years perfecting it. One look at his shelf of notebooks filled with the results of countless tests, changing the roasting time by mere seconds or the strength of the flame by the narrowest margins, shows his dedication to his craft. A serendipitous common friend introduced us to Dai-chan many months ago, but it is only now that our desire to create a coffee beer together with him has come to fruition.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tWhile 'Kamogawa no Hotoride' (\u003cspan\u003eor 'By the Kamo River')\u003c\/span\u003e\u0026nbsp;is, of course, a coffee beer, it may be better to think of it as a beer coffee. We were so impressed with the KBC Blend he created for our collaboration that we decided to put the focus of the beer mainly on his coffee. The aroma, flavour, and even look of the beer nearly mirror the beans, and we deliberately chose to under-carbonate the beer to keep the mouthfeel as close to coffee as possible. When they invited us to participate in their annual Snow Monkey Beer Live, we were both humbled and overjoyed. We knew the only way to mark the occasion was to brew a special beer for the festival.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tWhat we decided on was a base recipe that wasn't quite a Black IPA but much more than a Robust Porter or Foreign Export Stout that used our house Belgian yeast. Smokey and minty characteristics of the hops entice the roast character of the dark malts and dry fruit character of the yeast. Waves of flavour and bitterness come and go, making this a truly unique brew.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tNaming: Kurayami no Senko, or \"Flash in the Darkness,\" is how we see the position of craft beer in the larger beer world. Despite being overrun with (ironically) pale yellow liquid that largely tastes the same regardless of manufacturer, craft beer provides a wide variety of styles and flavours to the consumer, a glimmer of light in an otherwise dark landscape. We repeated the experience during the 2016 CBC\u0026nbsp;in Philadelphia, Pennsylvania, and the serendipity continued when both parties happened to be looking to share a booth at the Keyaki Hiroba Beer Festival later that year.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe beer started out as an excuse to use the small amount of Australian and New Zealand hops that each brewery was able to acquire. We were having trouble figuring out what the best way to express the unique characteristics of these hops while at the same time blending the character of each brewery. A Session Belgian IPA seemed too Kyoto Brewing Co., while an India Pale Lager seemed too Shonan Beer. Then it hit us: why not brew two collaboration beers and serve them side by side at the shared Keyaki Hiroba Beer Festival booth? To further the collaborative spirit, we decided to brew the exact same recipe at each brewery, changing only the yeast. While our head brewer writes most of the recipes and then asks Yasu for his feedback, with this beer we decided to flip the table and let Yasu take the lead in creating the recipe. As you read the name of the beer, you may have thought \"what does this name mean!?\" In a similar way, we felt people could pick up the beer, try it and wonder \"what hop is this!?\". This release embodies that dichotomy, with rich malt and yeast character typical of Belgian amber styles balanced by bitterness and fruity berry like aroma reminiscent of an American amber ale.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tNaming: For all the Belgian malts and yeast, as well as French hops, that went into creating this beer, the bitterness and aroma put it closer to an amber ale from across the Atlantic. The malt is all Belgian, but instead of using spicy and earthy noble hops that are traditionally featured in Saison, we decided to use citrusy and tropical varieties to accentuate the fruity esters of the yeast. The result is a tart and refreshing beer that is bone dry but has a juicy hop character reminiscent of peaches and mangoes. Grisettes were said to be refreshing, low alcohol Saison-like beers that focused more on the refreshing flavour of hops than the tartness of lactic acid found in many Saisons of the day.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tWith this in mind, we looked to Triskel and Aramis hops from the Alsace region of\u0026nbsp;France to give the beer a refreshing yet traditional character. To keep the body from feeling thin despite just 4% ABV, we used 10% unmalted Hato Mugi (aka Pearl Barley), a local grain that Tochigi is well known for and a common ingredient in many Ushitora brews. The result is, well, pretty spot on we think! After much back and forth, we narrowed the inspiration for the recipe down to a refreshingly dry Saison-IPA hybrid with juicy fruit and spice characteristics, enhanced by the addition of fresh citrus fruit and flavour of ponkan, a type of citrus fruit. While we don't normally use fruit in our beers, the addition really challenged us to incorporate it into the already complex array of flavours from the Saison yeast and Mandarina Bavaria and Cascade hops. Thankfully, we had the help of 9 people over 2 hours on brew day to squeeze 14L of juice and shave 2kg of zest from 25kg of ponkan, and you can truly taste the fruit of our labor in this beer!\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tAs we were hoping, the fruity spiciness of the Saison yeast keeps the beer dry and drinkable even at 6.0% ABV. The Mandarina Bavaria hops, known for their tangerine-like qualities, come through strongly in the flavour alongside the ponkan juice. The peel adds just a hint of extra aroma and really brings together what each party hoped to see in the final product.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe initial release of this beer will begin with an event at the Brussels group of bars on March 22, with a national release scheduled for March 29th. Not only have they been brewing some of the best craft beer in Japan for many years, they also gave our head brewer Chris his first real opportunity to work and learn the ins and outs of brewing and running a brewery in Japan. When we were invited to Snow Monkey Beer Live for the first time last year, we were so excited we made a beer in honour of the event, Kurayami no Senko (Flash in the Darkness). We decided to keep the tradition alive in 2017 and this year's special beer is a Belgian Red Rye IPA.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe inspiration for the brew came as the final addition to our series of beers that used grains other than malted barley. There are two types of rye malt featured, one that lends a unique spiciness and mouthfeel to the beer, and a crystal rye malt that imparts an aroma of rye bread and a pretty red hue. While generously hopped with citrusy and herbal varieties, this beer will continue to evolve as it ages as more of the rye malt character comes to the forefront. To challenge ourselves a bit more, we decided that both beers had to utilize two of the same ingredients not common to most recipes: coffee and Yuzu peel. Needless to say, this collaborative effort took a lot more planning, forethought, and experimentation than our first!\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tOur version incorporates some familiar components from previous brews while at the same time trying Yuzu for the first time. We opted for the \"dark\" side of the coin and crafted a stout with our house Belgian yeast strain, leaving the beer with just enough of a fruity component to match with the peel. For the coffee, we called in a favour from our friend Dai-chan of Kamogawa Cafe (you may remember his beans from \u003ca href=\"https:\/\/goo.gl\/Z5UmSy\" target=\"_blank\" rel=\"noopener noreferrer\"\u003eKamogawa no Hotoride\u003c\/a\u003e ('By the Kamo River'), our first coffee beer). This time he\u0026nbsp;custom-roasted a blend with just enough roast character to overcome the acidity of the beans but not so dark as to overrun their fruity character.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe result is one of the most unique brews we have made to date and certainly achieved the goal of creating a beer that tastes entirely different than it looks.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tNaming: Kaiki Gesshoku is a play on the words for \"total lunar eclipse\", as the word kaiki can not only mean \"complete\" or \"total\", it can also indicate something that is so unpredictably different than what is expected that it defies understanding. In addition to opening a new bar in Shinjuku and experiencing the Keyaki Beer Festival, at the top of the agenda was brewing the second leg of our collaboration. This beer is the second of a series brewed with our friends at Brussels Beer Project. The first was Zenith Zest, a Saison with Yuzu and Sansho pepper brewed in Belgium. The theme of Japanese ingredients in a traditionally Belgian beer was carried through to this collaboration brew as well in the form of Kyoto Miso and Belgian organic honey\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe balance of the two gives just a hint of extra nuance to flavours that are already right at home in the style. A hint of rustic sweetness this honey left behind plays well with the heavy load of richly sweet crystal malts. The miso is an almost enigmatic aspect of the flavour: when it comes to the forefront, its characteristic fermented richness can't be missed, but when it subsides into the background, the umami heavy miso leaves an interesting sensation on the tongue that we haven't experienced in any other beers.\r\n\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tNaming: 洋魂和才(Yokon Wasai) is a play on 和魂洋才 (Wakon Yosai), the iconic phrase that often characterizes Japan's approach to foreign affairs from the Meiji Restoration onward.
