(Highway at Dawn)

A bright and cheerful wheat ale, offering a lively and supremely refreshing hop aroma.

[Character]
A wheat ale with a pillowy body and crisp finish, offering broad citrus, tangerine, and pine hop aromas paired with a subtle citrus pepper spice, balanced out with a toffee, biscuits and honey-like malt flavour.
[Food Pairing]
Fried salmon with dill sauce toasted sandwich, grilled chicken with ginger and onion sauce, lemon peel sorbet.
[Naming]
While the Japanese version of this name, Asayake no Haiuei, does literally mean "Highway at Dawn", the implication is of a bright and colourful sky, fresh in the morning light. While we of course wouldn't necessarily suggest starting your day with a beer from the off (and certainly not behind the wheel!), this beer does for us conjure the the sensation of a bright and fresh morning, driving a convertable with the wind blowing through your hair.
[Brewer's Voice]
Introducing our Summer wheat ale. When it comes to the summer heat, few beers are quite as perfectly refreshing as a citrus forward wheat beer. As the name suggests it is loaded with wheat malt, giving the beer a soft creamy mouthfeel and plenty of haze. In there we layered some Munich malts for some toffee and biscuit character, as well as some honey malt for that nice golden hue and honey sweetness. We used 2 newer hops to us in Lotus and Mckenzie, which were both hops that showcased such wonderful citrus flavours and aromas when tested. We couldn’t wait to combine them into a beer together, and they did not disappoint. One little not so secret ingredient was the addition of some Grains of Paradise. This African pepper seed adds just a touch of spice, but also has a quite intense citrus character, which layers in seamlessly. A small dry hop was added to ensure a nice fresh citrus hop aroma greets you up front. This beer was fermented out with a California ale strain to ensure a crisp clean finish without lingering too long on the palate. This refreshing beer makes no-compromises on flavour and carries plenty of citrus character without ever adding any fruit. With that said, feel free to garnish your glass with a fresh slice of your favorite Japanese Citrus and it will pair together beautifully. Welcome Summer!
