The challenge with any Red IPA is balancing the malt flavour with the hops to ensure neither one muddles the other. The malt needs to be present, giving the beer a sweeter rich backbone, while avoiding the roast or chocolate flavours also present in many darker malts. We did this by using a blend of Pilsner and Golden Promise for the base, with some Red-x malt adding colour and a fruity malt flavour, with just a little dark wheat for colour. This gives the beer a deep amber hue while avoiding malt flavours that would clash with a hoppy beer. Speaking of Hops, we love to go with more of a "C"-hop flavour profile for these types of beers. Strong citrus and pine resin flavours compliment the rich malt notes while being able to cut through and balance out the extra sweetness. Many familiar classic hops went into this one with Cascade, Centennial, Citra, and Simcoe forming the core. There was also an addition of Tangier hops, which has flavours that remind us of Amarillo hops in their prime, with deep naval orange citrus aromas. This is a beer that we feel has improved every year with each iteration as we continue to refine its character. It makes a great Autumn beer, being hoppy enough for the daytime warmth, and at the same time malty enough to look forward to enjoying in the cooler upcoming days.
