Brewer's Voice:
This year we ring in the new year with our can-conditioned, imperial "farmhouse" saison. Saisons are often known as a farmhouse style of ale because historically they were brewed with whatever was available on the farm. This meant these beers often included a mix of grains and even potentially herbs and spices. We honour this tradition with a mix of rye, wheat, Munich malt, and floor malted pilsner. This gives the beer a complex semi-sweet malt character with a touch of rye spice. This beer was then boiled for 2 hours to further concentrate the malt character. Along the way, we added a mix of modern and classic hops including Styrian Goldings, Ekuanot, and Saaz, giving the beer a beautifally balanced blend of fruit, spice, and herbal aromas. Fermented with a farmhouse diastatic yeast strain, this beer has a dry finish with a mix of fruity and peppery yeast esters. This beer was can conditioned allowing the yeast to carbonate the beer naturally to a higher level, giving it a more spritzy champagne like feeling on the palate. This is a beer with a lot of complexity with a slightly boozy character, designed to be a treat to the senses for any celebration.
