十一十一十 (Toi Toi To)
Our 11th anniversary brew features nine different hops added in eleven stages, resulting in a modern double IPA that is explosively juicy yet very drinkable.
We did a lot of experimentation and testing with cutting edge hop products and processes this last year, and we like to offer something big and special for our anniversary beers. So, we decided we would combine those 2 ideas into one big splashy double IPA. In this beer, we broke from our normal process with recipe design, and we went with 11 hop additions in honour of the 11 years of Kyoto Brewing! With 11 additions, hops were added at nearly every stage of the brewing process, layering their flavours with each addition. With hops like Nelson Sauvin, Kohia Nelson, Super Sauvin, Citra, NZ Cascade and plenty more, this beer is full of tropical citrus, passion fruit, white grape and resinous character. With Nelson Sauvin having so many different characters depending on the lot and the growers, we made sure to pick hops that synergized with their flavours to prevent the hop character from becoming too muddled by the sheer amount of hop additions. We boosted this hop character even more by using Thiol Theory, a brand new Thiolized yeast by WHC labs. This is the 1st beer that has been brewed with this yeast in Japan, and it takes advantage of locked thiol compounds to bring out a more juicy tropical aroma. Unlike the extravagance of the hop lineup, we paired a more modest, clean and simple malt bill using our premium pilsner malt with a little wheat keeping the body light to let the hops show through. We went slightly drier on the finish to keep it very drinkable even at 8% but left it with enough sweetness to support the hop bitterness. Here is an IPA worthy of a celebration as we look forward to another year of fresh, new brews.
