Brewer's Voice:
As the summer heat breaks, and the leaves begin to change, that means it time for this year’s Fuyu no Kimagure. Back again is our citrus-forward White IPA. The base beer remains similar with a heavy wheat addition and some oats giving it a soft creamy mouthfeel and hazy appearance. However, Pilsner malt has been replaced with Golden Promise, adding a bit more mouthfeel and texture to the body with a soft bready flavour. Leaning into the citrus character, we changed out several of the hops this year, focusing on driving that candied citrus flavour forward. Citra makes an unsurprising appearance, but paired with that are Idaho7, Cashmere, and El Dorado hops. This combination gives the beer a more layered tropical citrus approach, coming across more as a candied orange peel flavour with a nice West Coast style pine character to balance it out. A warm mash rest and fermenting the beer with London Ale yeast gives the beer a distinct hazy appearance with a balanced to semi-sweet finish. As hops change year to year, we try to adapt the best hops we have on hand to deliver the character you would expect for our seasonal IPAs, and we are very happy with how this newly updated blend of hops delivers a tasty layered array of flavours.
