A light yet rich golden ale with a honey biscuity-ness born from the contribution of Japanese and Korean puffed rice.
This time the beer takes inspiration from the puffed rice snack widely available from street vendors, made using a cannon-like flame-heated pressure chamber! The goal for this beer was to make a malt forward but session-able beer that could showcase the puffed rice flavour, and also create an excuse to eat some puffed rice with it! For what flavour this imparts into the beer, think cracker, biscuit, toffee, and caramel notes, but in a lighter style thanks to the malt equivalent. This naturally led us to something like a golden ale. We used floor malted Maris Otter for its depth of flavour, paired with a small amount of biscuit malt and honey malt with a blend of 35kg of Japanese and Korean puffed rice in the mash, adding body and a pleasant sweetness to the beer. This beer was boiled for 6 hours to concentrate the malt flavours and add a bit of depth of colour, giving it its golden hue. A small amount of Mittelfruh German hops was added giving the beer a light bitterness and touch of spice character to balance out the sweetness. This was fermented out with a London style ale strain. Like many of our beers this is a hybrid of styles, and we were very pleased with how this beer turned out. It has all the light savoury flavours of the puffed rice, but the crispness that makes the beer, and the snack, an easy drink/bite.
