Premium Belgian Ale with Tencha green tea from Hori Shichimeien, one of Uji's most well known tea producer

Tencha tea is something that no one really gets to drink until the leaves are ground into maccha powder. Using the leaf form captures amino acids, creating a fuller mouthfeel and contributing an impression of sweetness in the beer. Bottle conditioning creates Champagne-like carbonation and foam that enhances both the character of the tea and the beer.
[Naming]
Hare to Ke expresses the concept of the "special" as opposed to the "everyday." Hare is meant for special occasions and was brewed with Tencha tea leaves, a premium tea not normally sold to the public outside of the ground form known as maccha.

This collaboration with Hori Shichimeien, one of Uji's most well known tea producers, has been something we have been working towards for a very long time. Incorporating tea in beer can be difficult, but working closely with our compatriots and utilizing their deep understanding of tea and its production methods allowed us to create two unique products from one base beer. After many months of discussion and testing, we settled on using Sencha green tea in Ke, and Tencha (the pre-ground form of maccha) in Hare. This collaboration challenged us as brewers to think about how the flavor and mouthfeel of tea can be used to accentuate attributes common to beer and we are proud to share what that effort has manifested.
