Cashmere brings a blend of pungeant melon, berry, peach, and other tropical flavours in this deeply complex single hop IPA.[Naming]If IPAs were considered to be a show, there's no denying that the star of it is the hops. Normally it's more like a blend - a band, if you will - of multiple hops performing together. For this series, however, it's a solo artist - a "Hop Idol", if you will, showcasing their individual talents on the big stage. Who would you vote for? The star of this show is Cashmere, the hop we really fell in love with on our trip to the US last year, bringing an unbelievable array of fruity layers to the fore.[Brewer's Voice]The next installation in our Hop Idol series is our showcase of Cashmere. This is one we have been excited about since our hop selection trip last year. Whilst not a new hop, or one we have known for the first time, what we found on this visit was a batch of hops that had such an intense array of tropical aromas, in such a way it was hard to pick out one specific flavour, but extraordinary in its layering, almost like a pot pourri of bright fruity wonders. With such an aroma, we were curious to see how this hop came through in the beer, and whether it would hold up. To support these tropical aromas, we went with a very East Coast-inspired malt bill, featuring a very large addition of oats, to give the beer its hazy appearance and a soft creamy body. We fermented it with a West Coast style strain to prevent the beer from having too sweet a finish, and to ensure the hops didn't get muddled. The Cashmere hops shine through with strong citrus, papaya, and mango aromas, bringing a surprisingly intense level of sweet tropical juicy character. It’s quite amazing the depth of character this single hop can contribute, appearing to be layered despite its singularity.
