A high percentage of wheat and oats add a creamy texture and hazy appearance with a slightly sweeter finish from the malt. Despite the large amount of hops, this beer is low in bitterness, keeping it flavourful, but also very drinkable.\u003c\/dd\u003e\u003cdt\u003e[Food Pairing]\u003c\/dt\u003e\u003cdd\u003eProsciutto and rocket leaf pizza, fried chicken with chili sauce, smoked pickled \"iburigakko\" radish with cream cheese\u003c\/dd\u003e\u003cdt\u003e[Naming]\u003c\/dt\u003e\u003cdd\u003e\"Hyotto\" is a Japanese word that means \"maybe\" or \"perhaps\".  It can be used when predicting an outcome.\u003cbr\u003e\n\u003cbr\u003e\n\u003cp\u003eThis felt fitting for the more experimental elements of craft beer brewing, where one can use one's many years of experience to judge what a combination of hops may come through as, or how a yeast strain's esters might interact with them.  The new understanding of thiolization, where compounds are released, has added a new layer of this, and frankly there is an element of trial involved in this.  This mini series summarises this.  We know it'll be tasty.  We know it'll be juicy.  But exactly how it will taste?  All we can say is \"Hyotto...\"\u003c\/p\u003e\u003c\/dd\u003e\u003cdt\u003e[Brewer's Voice]\u003c\/dt\u003e\u003cdd\u003eThe second in our experimental series, we are once again bringing back blended yeasts. Using a similar blend to the 1st batch, we wanted to take it in a different direction in terms of style. This time, we took it more towards a modern East Coast Hazy IPA. Using the tropical fruit and slight spicy esters of the yeast, we layered on bold hop flavours of citrus, berry, stone fruit, and resinous cannabis-like notes.  This beer has heavy hitting hops from top to bottom here with Citra, Mosaic, Riwaka, Lotus, and a hop blend called Mega Terps.  The very hazy appearance is created not only by the yeast blend but also by the large amounts of wheat and oats.  A touch of honey malt adds some sweetness, and the body is boosted with malt dextrin, giving this beer a bit more of a sweet finish, only balanced by the large hop presence.  The two yeasts are quite different, but they also seem to symbiotically co-ferment.  We are excited to see how this unconventional and experimental yeast blend takes these familiar hop flavours and presents them in a new light.
