Brewer's Voice:
Inkhorn are known for their big hazy IPA’s and hoppy lagers, so naturally we decided to brew something completely different! Introducing our collaboration Barleywine. Falling between the English and American interpretations of this style, we went for more hop presence than the English styles, but a cleaner, softer malt bill than the American versions are known for. A base of Maris Otter malt comes together with a touch of Special B, along with some Munich and flaked rye. This beer has a nice semi-sweet caramel and toffee malt profile, with just hints of dark raisin and spice. The beer gets it’s reddish copper hue from a combination of the malts with caramelization through an extended 3-hour boil, which also concentrates the malt flavours. A blend of English hops on the hot side gives the beer a subtle and balanced herbal character to balance the malt sweetness, while American Cascade and Chinook were added later to give the beer a light fruity citrus edge. Fermented with a London ale strain, this beer went through a slow primary fermentation for nearly a month, before undergoing another month of cold conditioning. This gives these big beers time for the bold flavours to meld and soften, resulting in a surprisingly easy to drink beer for its aggressive 9% ABV. This beer is a big decadent treat to the senses, and is perfect for warming you up on these cold winter nights!
