Brewer's Voice:
With our latest iteration of the New Zealand themed Irotoridori series, we offer a more resinous take. New Zealand hops are known for their bright tropical and citrus flavours,but for this one we leaned more on the concentrated overripened fruit character these hops can offer. The base of this beer veers close to a Hazy IPA, consisting of a large percentage of wheat and oats contributing to its Hazy appearance, with just a touch of light Munich malt to add some depth to the malt character. A warmer mash rest, with a low attenuating yeast, and the addition of maltodextrin, means this beer has plenty of body for its lower ABV, with a mildly sweeter finish. This sweeter finish compliments the stone fruit, citrus, and dank resinous character contributed by the hops. Waimea and Rakau make up the hot side additions, adding flavours of apricot, pink grapefruit, and papaya, with some tropical citrus aromas. Waimea was added again in the dry hop accompanied by some Nelson Bliss. Nelson Bliss hop goes through an extra conditioning phase after harvest to bring out more of its cannabis/diesel-like fruity character. All this comes together in a Pale Ale that has all the character of a Hazy IPA, but with a more sessionable ABV allowing you to enjoy more than one.
