One of two beers that we have made for this year's Autumn Kyoto Racecourse season. Whilst one beer was requested to be made with the Queen Elizabeth II Cup in mind, this beer was made with the Kikuka Sho (Chrysanthemum Cup) in mind. When searching for new and interesting flavours in beer, sometimes you need to look outside the normal. Using some of the experience with our flower saisons, we wanted to take that fresh floral character and use it in a new style to compliment and elevate an IPA with flavours hops cannot achieve on their own. This Belgian IPA adopts a heavy amount of wheat, adding body and haze while giving the beer a full but soft mouthfeel. With White Chrysanthemum buds being quite an impactful flower, we felt this could be a great fit for use in an IPA, where the hop impact would also be strong. These flowers not being fully developed retain a sweeter floral character, keeping the beer softer and more suitable for a hazy IPA. To compliment these flowers, we used hops that have a somewhat sweet floral character of their own. This includes El Dorado, a hope that adds a honeydew melon, with citrus and floral flavour. Meridian hops were also used, adding lemon, boysenberry, and a refreshing minty character. We finally brought in Idaho 7, adding a layer of tropical citrus and stone fruit flavour and aroma. This combination was all finished out with our Belgian house yeast, giving it our trademark dry finish with a further contributed layer of fruity and spicy aromas. The goal with this beer was not to have the flowers stand alone, but instead blend the flower character with the hops so the line between them blurs, and instead offers new flavours to pique the interest of even the most seasoned beer drinkers.
