[Naming]
The Japanese name for this beer, "Ifu Doudou", is a play on the Japanese name for Elgar's Pomp and Circumstance. A big, boastful beer on one level, and yet majestic at the same time. That said, there is a bit of playfulness in there, as we always like, with Japanese ingredients taking place of traditional European ones to make the beer fitting for KBC.

To close out the Rediscovery series for this year, we saved Belgium's most revered beer style for last: Quad.

These beers are known for balancing a wide range of flavors and high ABV while retaining high drinkability. While most Belgian beers are light in color, Quads often have a darker hue from the addition of specially processed sugars. We used kuromitsu sugar to give this beer a domestic spin and harness its dark sweet flavor to give complexity to what is otherwise a very simple beer.

The result is complex yet drinkable, rich yet dry. The aroma is dark fruit from the kuromitsu and our house yeast. The body is dry but not thin and retains rich character from the base malt.
