[Naming]
The Japanese name for this beer, "Ifu Doudou", is a play on the Japanese name for Elgar's Pomp and Circumstance. A big, boastful beer on one level, and yet majestic at the same time. That said, there is a bit of playfulness in there, as we always like, with Japanese ingredients taking place of traditional European ones to make the beer fitting for KBC.
[Brewer's Voice]
For the last beer in the rediscovery series, we will be bringing back our Belgian Quad. This is a style renown for its ability to showcase a wide variety of malts in a decadent high alcohol format. Once again, this big beer went through a very long two-and-a-half-hour boil to bring out more color and rich caramel flavors from the malt. In leu of traditional Belgian Candi syrup, we used Kokuto dark sugar to add some depth and complexity to the malt character. This beer underwent secondary fermentation in the can contributing a nice low level of carbonation to bring out more of the dark sugar flavors. With a high ABV this beer is designed to be a treat and will be great for the cold winter nights.

Naming: 伝統を重んじながらも、決してそれにとらわれることなく、柔軟に新しい考えを取りこんで前進しようという進取の気性に富むものこそが、まだ見ぬ光をつかみ、時代を築くものであるという考えから、あの有名な曲と一字違いの"異"風堂々という名前をこのビールにつけた。かつてこの曲ができた背景は異なれど、挑戦する者を称えるようなその旋律は、これから新しいビールを造ろうという挑戦者たちを勇気づける。
