Just in time for the summer heat, here's a refreshing Mojito-inspired lime ale. A light and simple base malt profile of pilsner with a touch of white wheat keeps the beer crisp, and we hopped this one mildly with Motueka for its lime notes, and then Meridian for its citrus mint flavours. The challenge with making cocktail inspired beers is many cocktails use sugars to sweeten them, and due to fermentation it can be difficult to replicate a similar type of sweetness. For this beer we used Monk fruit to sweeten it up. Monk fruit contains a Mogrosides, a natural compound that is over 100 times sweeter than cane sugar and yeast but which the human body cannot process. This allows it to be an incredible natural sweetener without adding any calories to the beverage. To balance some of this sweetness, we conditioned the beer with lime juice, and we co-fermented this beer with a blend of champagne and Kolsch yeast to give it a clean dry finish while adding some light fruit esters. Lastly, the beer was given a mint and lime boost to finish it all off. This was a fun and challenging beer to make, and one that is perfect for the season.
