This is the last installment of the Six Tastes IPA series, and on the surface the most obvious one (bitter). However, as with many of the other parts of this series, our main goal was to explore the six flavor sensations through the style of IPA rather than just make sweet or salty IPAs. This release is no different. Instead of just making a very bitter beer, we explored the role that traditional forms of hops play. Our challenge was to make an IPA without using any hop pellets or cones. Instead, non-traditional forms like CO2 extract and oils are used to provide 100% of the bitterness and aroma. Is this the future of IPA?
