Matured to bring out this saison yeast's full depth and complexity
[Character]Strong spice and fruit flavors and aromas from Saison yeast combine with a full body and dry finish to make a celebration in a glass. [Food Pairing]Roast meats such as duck and pork, peach tart[Naming]The Japanese name of this beer literally tranlates as "going along the old road", which in Japanese invokes images of a pilgrim walking down a mountain trail in search of enlightenment. As a brewery that has been a devotee of the saison style from day one, the further exploration of this has very much felt like our own pilgrimage.
Within this mini series, this particular version is "Shido" or "Beginning", to mark the start of our latest journey down this path in the form of a strong saison to welcome in the new year.[Brewer's Voice]The Saison style inspired us to found Kyoto Brewing Co., and Pilgrim's Respite is now our journey in exploring its roots. The flavor and aroma of this strong version is dominated by the fruit and spice character created by a specially selected yeast strain. The grainy spiciness of rye malt and soft fruit flavors from modern German hop varieties add to the complexity.
As with all releases in the series, this beer is refermented in the bottle/keg and will continue to improve with age. For best results, store at around 15C and refrigerate a few days prior to opening.
