A crisp and dry brut IPA inspired by the white wines of New Zealand

Hops are produced all over the world, however, and vary hugely in character. This series is a celebration of characteristics of 6 countries, and a reimagining of the IPA through the lens of their respective beer cultures. [Brewer's Voice]Hops from New Zealand have a unique character that just aren't found in those developed or grown in other regions. In addition to tropical flavors and aromas, they also have sharp citrus and sweet fruit attributes. While they shine in IPAs, we were a bit on the fence about which type of IPA would suit them best.
When thinking of how to incorporate additional layers of New Zealand into this brew, we started to think about it's well known white wines with flavors of citrus, grapefruit, and stonefruit. These flavors are also common to NZ Hops, so we thought that matching them with a wine-inspired Brut IPA would be the best fit.
A special enzyme yeast means that nearly 100% of the sugars are fermented, making an ultra-dry beer. A small addition of rice flakes keeps the color low and the body crisp.
