ただいま (Tadaima)

A traditional Czech-inspired lager overflowing with Saaz hops, and their wonderful herbal aroma

[Character]
A classic Czech-style Pilsner with a clear golden appearance and light body. Herbal and flowery aromas adorn this beer thanks to the Saaz hops. A crisp, light body, with subtle notes of toffee and biscuit from the malt, are complimented by a dry finish.
[Food Pairing]
Wild Japanese garlic tempura with hop salt, Pork belly simmerred in tomato with sauerkraut, Squid and Celery Sauté with Anchovy
[Naming]
Classic lagers can perhaps be seen as an "every day" beer. They fit a wide variety of situations, and there's nothing really more satisfying than raising a thick glass full of lager. Or that first beer when you get home! Or that one that you crack open at the start of your meal, or drink when you get out of work. This series celebrates the cyclical and every day nature of the world's most popular alcoholic beverage. This product is "Tadaima", a rough equivalent of "I'm home". A beer for many occasions, but one that we think particularly fits when you walk through the door and want tha cleanness and dryness, but just that extra bitter bite to kick off your evening.
[Brewer's Voice]
I feel like Tadaima Czech Pilsner has been getting better year after year. This is a very simple Czech beer but making them well is anything but simple. It’s all the small, nuanced differences and cellar processes that really define these clean light beer styles. This has been one I’ve been working on honing making it better with each small change. Since sadly we only make it one time a year, I don’t have many chances at it. Malt and hop bill are left unchanged, so the beer still has its light crisp drinkability with hoppy character. This year, the beer comes back with some small tweaks. We dried the beer out just a little bit more (about .5 Plato) and moved over to another lager stain that we really enjoyed the character and body the yeast leaves behind. We also tweaked the fermentation profile slightly letting it start off cool warming it up as it finished fermenting. Our Saaz hops have been getting better every year, so in a beer like this, better quality hops make all the difference. This beer has the right amount of crisp, hoppy and drinkability that I look for in these styles. Designed to enhance the conversation, not take it over. This is a regular beer for me while we have it and so far, I think this year’s brew is the best one yet!
