This is a very simple Czech beer but making this style well is anything but simple. It’s all the small, nuanced differences and cellar processes that really define these clean light beer styles. This has been one we’ve been working on honing, making it better with each small change. This time the malt and hop bill are left unchanged, so the beer still has its light crisp drinkability with hoppy character. This year, the beer comes back with some small tweaks. We dried the beer out just a little bit more (about .5 Plato) and moved over to another lager strain that we really enjoyed the character of, as well as the body that the yeast leaves behind. We also tweaked the fermentation profile slightly, letting it start off cool, and warming it up as it finished fermenting. Our Saaz hops have been getting better every year, so in a beer like this, better quality hops make all the difference. This beer has the right amount of crisp, hoppy and drinkability that we look for in these styles. This was already a regular take home beer for us, but we think this year’s brew is the best one yet!
