A refreshing sour beer created with Fuji apples from Aomori and a special yeast strain

[Naming]
This beer's name comes from the tekika pruning process used by Japanese apple farmers to ensure their trees produce the biggest and tastiest fruit possible. A portion of the juice used comes from under matured apples removed from trees during tekika.
[Brewer's Voice]
This product has special meaning for us as we worked closely with Moriyamaen, an apple farm in Aomori Prefecture where the founders of Kyoto Brewing Co. met, to source the juice. What is more, 45% of the juice used comes from under matured apples pruned during the tekika process, meaning new life is given to what would otherwise have been waste. What is more we are using the same lactic acid producing yeast that we featured in Tama to produce this beer, giving it a slightly sweet, slightly acidic, refreshing cider like character.
