Most people would describe Brettanomyces beers with one word: funk. While this is indeed the dominant character for traditional usage of this yeast, this beer uses Brett for primary fermentation. Interestingly, under these conditions, Brett produces tropical, fruity, and pineapple-like flavors and aromas—about as far away as funky as you can get!

To further enhance these base flavors, we added a healthy dose of Vic Secret, Idaho 7, and Mosaic hops. This creates a perception of ripe pineapple and mixed juice both in the aroma and the flavor. While it may start to become apparent over extended ageing, at the time of packaging the funky side of Brett is nowhere to be seen, and its contribution is felt more in the dry finish than anything else.

This beer was an experiment from start to finish and produced one of the most unique IPAs we have ever crafted. We look forward to your reaction to the lesser-known side of Brettanomyces!

Naming: While we didn't acquire this in the wilderness, brettanomyces exists naturally all over the world. As such, it is often referred to as "wild yeast", and can be notoriously difficult to control, meaning that wine makers and brewers the world over live in fear of its ability to infect the entire facility. For this brew, however, we decided that rather than trying to tame it, we would instead embrace it and let it off its leash! And, yes, in naming it as such we took huge liberties with the use of the English language.
