三本の矢 (Three Arrows)

For some collaborations, the recipe just seems to write itself, and this was certainly the case with the guys at DevilCraft. It seemed like we were in each other’s heads, finishing each other’s thoughts about how best to convey our idea in liquid form, meaning it all came together in an instant.

The original theme proposed for the brew was Brut IPA, an effervescent, bone-dry, champagne like beer originating from California and a world apart from the cloudy hop bombs made popular on the east coast. The signature dryness is usually accomplished through the addition of a commercially produced enzyme additive, and while this would have been the easy option, our exchange of ideas soon turned to how we could accomplish this without resorting to artificial additives. Specifically, we looked to grape juice to increase the amount of simple sugars, making the yeast’s job easier, and a vigorous Saison yeast that leaves little residual sugar even with all malt beers.

The result is something totally unique that at the same time exceeded our expectations on many levels. While the beer is bone dry the juice flavor still remains, giving the illusion of a sweet finish. A cornucopia of fruit-forward hops were layered on top of this creating a fusion of juicy hop character, making this a truly unique Brut-inspired IPA!

Naming:

‘One arrow can easily break, but three arrows stacked on top of one another cannot break so easily.’

These were the words that Motonari Mori, a warlord during Japan's Age of Warring States, a period marked by near-constant military conflict, passed onto his children. Individually, it’s easy to fail. However, if you work together, you have a greater chance of success.

This is a lesson that is still taught today in Japanese schools. It also embodies both DeviCraft and Kyoto Brewing Co., as both breweries are owned and run by three owners that work together to take advantage of their different strengths and cover for their different weaknesses.
