A perfect winter IPA, combining sharp citrus and a soft, white, wheat character

Last year we went heavy on citrus. This time, we decided to go even heavier on the wheat content to gain an extra softness, and used a new "Kohatu" hop variety that gives a slight greenness and piney character, as well as a firm bitterness. The combination of bitterness, fruitiness, and softness for us gives it a nice balance that makes this a pint that you can enjoy right until the end.
