Strong Saison brewed with Rice and Elderflower.
But what kind of Saison? Saisons are one of beer's most variable styles. Originating as a beer made by farmers in rural parts of Belgium, these are often still referred to as "farmhouse ales". While classic examples exist, they traditionally would have been made with a wide range of ingredients based on availability farm-to-farm, both in terms of variety of grains, and occasionally with adjuncts such as herbs and spices, and would also vary in terms of the naturally occuring yeast strains available.
While we are not restricted by what is “on the farm,” We wanted to capture some of that spirit and showcase some local and less commonly used ingredients in beer. Rice, one of the mostly widely grown grains in Japan was used to lighten up the body and color, and also to add a crispness to the beer. We decided to add an adjunct to bring in a further layer, and so we settled on the addition of elderflower. This flower imparts a flavor and aroma unique to itself. What can be best described as a sweet flowery herbal character but is best enjoyed to be understood. With a touch of orange peel in the mix to add some lively citrus character. These spices when paired with our Belgian yeast results in an aromatic experience with a very drinkable beer, despite its strength. Just what you need when looking to celebrate!
