[Naming]
In Japan, the 13th night of the month is called the chestnut moon and the 15th night is called the sweet potato moon. Japanese pears, with their white flesh and round shape are often compared to the moon and the clear autumn night feels fitting for such a seasonal fruit!
[Brewer's Voice]
The Iridescence Series is our way of trying to introduce more people to the wonders of sour beer. While it is our hope that beers like Lambic and Gueze will one day take on the same level of reverence that they receive abroad for the complexity of their flavors and production techniques, we understand that they are acquired tastes that require some getting used to. By combining fruit with the refreshing acidity of sour beers, we hope that their appreciation will spread and encourage customers to try non-fruited versions as well.

This installment is a bit of a departure from other fruits we have used thus far. Pears, while delicious, don't quite have the impact of fruits like raspberry or passion fruit. We found a supplier for domestically produced pear juice that was so tasty, however, that we decided to fit it into the series anyway.

Lactic fermentation provides a strong base acidity with subtle citrus and guava aromas. To this we add nearly the same volume of wanashi pear juice with a round and smooth sweetness. A hint of salt helps the sweetness stand out in this simple yet satisfying brew.
