A refreshing sour ale bursting with citrus peel and juice character, supported by suitably citrusy hops.
[Character]A sweet yet sour citrus ale brewed with peels from Hassaku, Iyokan, Yuzu, and with plenty of orange and grapefruit juice. Hazy and light orange in colour, this drinks more like a mimosa than beer.[Food Pairing]Fried chicken with sansho, raw onion and citrus fruit salad, fried white fish "nanbanzuke".[Naming]Citrus fruits are almost infinite in their variety, but have certain crossover attributes, starting with their round shape, going through to the triangle of flavours: bitterness in their peel, and acidity and sweetness in their flesh. We wanted to represent all of these elements in a beer, and so used a variety of different fruits, where we took the elements we think stand out best to bring a character that we feel represents "citrus" well.[Brewer's Voice]Back another for another year is ○のち△, our citrus sour. We made some further changes this year, looking to make the beer as good as we possibly could, while not losing the wonderfully juice-forward character that it had. We felt that the previous editions were a bit too sour for our liking, so we decided to ditch the Philly Sour yeast that contributed quite a bit of the sour impact, and just let the juice contribute the acidity. We think this was the right call, as this year’s batch is almost like a mimosa in a can, with a much softer and more natural sourness. In its place, we used a yeast called “Pineapple Passion”, a tropical fruit ester-producing yeast to add another layer of fruit character. Additionally, we removed the Citra and used a NZ hop this year called Southern Cross. During Selection, this hop stood out for its intense candied orange flavour, so it was a natural fit to go alongside all the other citrus.
Tons of orange and grapefruit juice were added as always, and the beer was conditioned on 3 types of citrus peel. This beer is citrus from start to finish, and we are really happy with the changes this year, which we believe make it more drinkable than ever.
