Using a variety of citrus juice and peel, along with fragrant lime leaves, this fruit sour offers a compelling combination of acidity, bitterness, and sweetness

[Character]
A triangle of citrus elements: sweetness and acidity from the mikan and grapefruit juice supported by kettle souring, and bitterness and aroma from the yuzu and orange peel, as well as lime leaves, we attempted to represent citrus in a round way by including their 3 core flavour elements.
[Food Pairing]
Fried chicken with sansho, new onion and citrus fruit salad, fried white fish "nanbanzuke".
[Naming]
Citrus fruits are almost infinite in their variety, but have certain crossover attributes, starting with their round shape, going through to the triangle of flavours: bitterness in their peel, and acidity and sweetness in their flesh. We wanted to represent all of these elements in a beer, and so used 5 different fruits, where we took the elements we think stand out best to bring a character that we feel represents "citrus" well.

The Mansai series has produced many easy drinking sours. For this edition, we wanted to make a slightly more sophisticated sour that people wouldn't get tired of drinking.

Coming out of winter, we wanted to stay seasonal and focus on the abundance of citrus fruits. In order to represent citrus well, we went for the juice, the outer peel, and the leaves, which are used for their aroma in many cooking cultures.

The gentle and fresh character of mikan is the main ingredient, made more characterful with the sharpness and bitterness of grapefruit. Orange and yuzu peel are used for their intense aroma, and the lime peel gives the final accent. The overall affect is a juice-like appearance, a fresh fruit character, with acidity and just enough bitterness rounding it off. Enjoy!
