[Character]A shamelessly over-the-top fruit-forward West Coast-style triple dry-hopped Imperial IPA. Huge tropical aromatics accompany this beer, with aromas of sweet citrus, pink grapefruit, and resinous pine. Modern techniques look to get the best out of the enormous hopload, with a slight booziness present with a clean light malt body. We consider this to be a project - our Apollo program, if you will - and for that reason we decided to give similarly themed names, kicking off with Arion, and now with Orion.[Brewer's Voice]The second in our modern Thiol-centric beer series, this beer is also predominantly based on a West Coast-style IPA. This might seem surprising at first glance, given that there is a strong amount of haze, but this is simply due to the sheer amount of hops that even the highly flocculant West Coast ale yeast and the clean malt bill can't prevent. The base malt profile of this beer consists of just Pilsner with some very light Munich for a touch of biscuit flavour and body. Moving on to everyone’s favourite part: the hops. We uses a generous amount all through this beer from the brewhouse all the way to packaging. On the hot side, we used a blend of Centennial, Chinook, Motueka, and Waimea, with added Phantasm for its thiol boosting precursors. The goal here was to overlap thiol compounds to achieve a sweet citrus, pink grapefruit, and resinous pine character. We continued this through with a fermentation dry hop of more Motueka, Waimea, and this time some Strata as well. For our further dry hop, we added another large helping of Strata and some Rakau for its rich almost overripened tropical citrus notes. To finish it off, this beer was cold conditioned with some more added Waimea and Rakau hops to give it just a little bit more fresh hop aromatics. At 8%, this beer has some amazing yeast esters that complement the fruity and dank hop aroma. As is typical for a West Coast style beer, this brew has a crisp and dry finish, helping to maintain its drinkability even at the higher ABV.
