ハベリオン (Haberion)

A fresh and juicy IPA that's as pillowy as it is punchy, an packed full of tropical character

[Character]
A blend of thiol-driven hops come together in this Hazy IPA to bring a rich mix of citrus, passionfruit, and tropical flavours. This beer has a semi-sweet body with low bitterness, and a soft creamy mouthfeel to support the hop load.
[Food Pairing]
pineapple and ginger pork saute, salmon and scallop grilled with citrus-infused sauce, fig and cured ham salad with gorgonzola
[Naming]
This mini series focuses on the enhancement of IPA as a style, and its constant evolution. We consider this to be a project - our Apollo program, if you will - and for that reason we decided to give similarly themed names, kicking off with Arion and Orion, and now with Haberion.
[Brewer's Voice]
This is the 3rd beer in “Enhanced” series of 4 thiol-focused IPAs. The 1st two beers in the series (Arion and Orion) used a West Coast California ale strain. This thiol-forward IPA, however, is the first of two using a Hazy East Coast ale yeast. True to the style, we used heaps of wheat and oats in this beer, contributing to its hazy appearance and creamy pillowy mouthfeel. We used what some may see as an odd blend of hops, but the focus this time around were on hops that gave us 3SH and 3SHA thiols, which are responsible for passionfruit, guava, and pink grapefruit aromas. We went a step further and used a heavy amount of Munich malt, which also contributes to the total thiol extraction of this beer. A mix of Cascade, Citra, Mosaic, and Nelson Sauvin make up the hop list in this beer, but rather than tasting the individual hop character from these hops, the thiols combine into a tropical medley all on their own. The bitterness was kept on the low side to maintain the beer’s drinkability and stay out of the way of the sweet fruit character. Malt dextrin was used to ensure the beer didn’t dry out too much, and to really accentuate the sweet juicy character. Crafting a beer on thiol contribution rather that the hop character itself is a fun challenge, and has resulted in some incredible tropical IPAs using unconventional blends of hops. The hop load on these beers are some of the highest we’ve ever done so get his one while its fresh for maximum hop punch!
