異風堂々 (Romp & Circumstance)

Featuring Okinawan brown sugar, this quad has been instilled with a Japanese twist

[Character]
Rich flavors from dark malt and Okinawan brown sugar. Lucious mouthfeel from an extended boil. Lots of dark fruit character balanced with a dry finish and firm hoppiness.
[Food Pairing]
Fruit cake such as stollen, Beef stewed in red wine, blood sausage
[Naming]
The Japanese name for this beer, "Ifu Doudou", is a play on the Japanese name for Elgar's Pomp and Circumstance. A big, boastful beer on one level, and yet majestic at the same time. That said, there is a bit of playfulness in there, as we always like, with Japanese ingredients taking place of traditional European ones to make the beer fitting for KBC.
[Brewer's Voice]
To close out the Rediscovery series for this year, we saved Belgium's most revered beer style for last: Quad.

These beers are known for balancing a wide range of flavors and high ABV while retaining high drinkability. While most Belgian beers are light in color, Quads often have a darker hue from the addition of specially processed sugars. We used "kokuto" dark sugar to give this beer a domestic spin and harness its dark sweet flavor to give complexity to what is otherwise a relatively simple beer.

As a change from last year, to bring out the richness and flavour, this time we boiled it for double the time after adding sugar. Also this time around, as with others in the series, we refermented it in its packaged form, giving a finish that allows you to enjoy the complex aroma of dark sugar and malt even more.

Please enjoy our nuanced twist on one of Belgium's most revered traditional style!
