A refreshing and mellow fruit sour packed with sweet white peach aroma

There's little more satisfying than eating a juicy peach, and the aroma alone is enough to conjure images of a first bite. While all beers are liquid, this one is particularly enjoyable in moments of thirst![Brewer's Voice]When it came time to make our next fruit sour, there was a bit of extra excitement from me for this one. Peaches are one of my favorite fruits. There is nothing quite as enjoyable as biting into a fresh peach on a hot summer day. I wanted to capture that essence in this beer. I have mentioned it before, but simplicity is the best approach for any beer where you want to focus on letting an ingredient shine. We kept that minimalist approach to ensure that nothing got in the way of the bright peach flavors. For the malt bill, we used a clean neutral pilsner malt with a bit of malted and flaked wheat to soften the mouthfeel and add a touch of body to this sour. Keeping with this trend of a soft base beer, we added just a small bit of Sabro hops. These hops are known for their ability to add a juicy tropical flavor alongside notes of coconut for a mild but pleasant hop accent. To sour this beer, we used a blend of Philly sour Yeast and London ale 3 fermented at a warmer than normal temperature. This allowed the London ale 3 to impart some soft but tropical fruity esters into the beer while the Philly sour contributed a light acidity. Last, but not least, this beer was fermented with a large amount of peach juice imparting all that wonderful peach flavor and aroma. The resulting beer is a very crushable peach sour that is perfect for this hot weather.
