A citrusy IPA amplified with the addition of grapefruit juice
[Character]Using citrusy hops reminiscent of grapefruit peel, we added grapefruit juice to add a touch of the sharpness and juicy character to the flavour, and added just enough body.[Food Pairing]Bitter salad with chicory/endive and citrus, seared white fish carpaccio, deep fried pork shoulder[Naming]The Rokkasen series' concept is based around taking a fruit and expressing it in an IPA form, with the addition of fruit. The naming convention for the individual products literally refers to "果" ("ka") meaning fruit, and then a character representing the fruit or character. This time it is "柑" ("kan"), literally meaning citrus.[Brewer's Voice]This series focuses on combining hops reminiscent of certain fruit, and complimenting them with the actual fruit. Our first in the series is focused on grapefruit.
Go back 10 years, and Ballast Point made grapefruit IPAs all the rage by adding peel to accentuate the nuance from the hops. We took it in a different direction, taking modern American and New Zealand hops for the grapefruit aroma, and supplementing them with grapefruit juice instead of peel to offer a fresher grapefruit taste, along with a touch of sharpness.
