もものふ (MOMONOFU)

A celebration of NZL hops made with our brewer friends to create a truly tropical pale ale

[Character]
Pale ale with a Maris Otter base giving the beer a very soft and creamy mouthfeel. With a heavy amount of New zealand hops, this beer has a prodimenately tropical flavor and aroma blended with a mix of citrus, stonefruit. This beer is easy to drink but very full of character.

[Naming]
"Momonofu" is another word for warrior or knight or, in Japan, a samurai. With this nuance, and with the idea that "momo" is Japanese for peach, we felt it a perfect name for a beer that showcases this stonefruit character with the Peacherine hops, this beer's weapon!
[Brewer's Voice]
Hops are a natural product, and because of this hop quality and character can vary greatly not only each year, but even between different lots and growers. I strongly believe that going to the hop farms and evaluating and selecting your hops from the source is one of the most important things you can for raw materials as a craft brewery. The Kyoto team along with several other breweries in Japan all went down together for selection of our New Zealand hops being produced by Freestyle Hops. With one of Freestyle’s proprietary hops, we decided to do a 5-way collaboration showcasing this hop alongside some of our other recently selected hops. To make this a bit more fun we randomized and spun a wheel to decide on the style of beer, a supporting hop, and an adjunct to be added. The results of this spin were that Kyoto was making a Peacharine Pale ale with Waimea and Lactose. A lactose pale ale is definitely a bit of a curveball, but one I was excited to take on. In this beer we used Maris Otter as a base malt with some wheat and oats. I wanted to focus on a very soft and creamy base malt character to blend with the lactose to give a oat cream like mouthfeel. For hops, Peacharine is obviously the star of the show and pair with Waimea along the way. These hops impart a nice combination tropical, citrus and stone fruit flavors. In addition to those we used a bit of New Zealand cascade in the Mash to add a soft bitterness while adding some extra Thiols for our yeast to take advantage of. Speaking of yeast, we are once again using a out new yeast called Pomona. This yeast adds another layer of tropical esters and fruit character. Lastly, this bee was dry hopped mid fermentation to take advantage of biotransformation of the hops giving the beer a rich hazy appearance with an incredibly soft body, bursting with hop character throughout the beer.
