Surprisingly crushable Baltic Porter brewed with Japan grown raw malts and a hybrid lager yeast.
[Character]This lager fermented Baltic porter gives you some familiar chocolate and roast character you would expect from a porter, but in a much softer package. Some light fruity notes from the lager yeast and a dry crisp body makes this beer much more drinkable than its style or ABV suggests.[Naming]For this charity beer made for Movember, the Japanese name for this beer refers to a phrase roughly translated as "thick and short", but the nuance is more akin to "short and sweet", as a reference to life. The meaning of this seemed a relevant reference to men's cancer and mental health issues, which too often remain untreated. We decided to spin it around and switch the short for "long", with the idea that life can be "long and sweet".[Brewer's Voice] Brewing in collaboration with 2 rabbits, we decided me wanted to brew beers that were tied together, less known styles, and used Japan grown ingredients. We decided on beers originating from the Baltic Region; a Sahti and Baltic Porter. At KBC we brewed a Baltic Porter, a style unique to porters for its high ABV, lager fermentation, and drinkability.
The design of this beer had to start with using great malt. This beer is built using a base of golden promise and a mix of medium crystal and chocolate malt for color and flavor. With this we used some Japan grown raw barley and raw rye malt. This blend of malts lends to a soft malt body with notes chocolate, toffee, and caramel. The raw malts add a bit of spice and body to the overall mouthfeel. Hops were kept simple and meant to give a soft bitterness to balance out the malt sweetness and add a touch of herbal character to add depth of flavor. The beer was then fermented with a hybrid Lager strain designed to give the beer is crisp dry finish and soft aromatics. Some light fruity esters blend with the slight booziness from the alcohol to give semi sweet fruit character on the finish. This style has always been a favorite of mine as it blends some of the beautiful flavor character with darker roasted and caramel malts but does it in a soft drinkable format.
