七転び八起き (8th Time Lucky)

This beer adds another page in the story of Saison at Kyoto Brewing, and with it we set out to explore the style’s deeper and darker side. Two varieties of dehusked dark malt were used to manipulate colour without imparting a roasty bitterness. While Munich and Rye malt were used to lend a richer body and fuller yet spicier flavour to the beer. This combination was a perfect match for the citrusy component of the new Saison yeast we debuted with One Step Back. The result is far from traditional, with heavy berry notes resting on hints of roast and honey. We think you will agree that this interpretation of Saison’s dark side is a unique brew to say the least!

Naming: There is a saying in Japanese that literally translates as, “fall down seven times, stand up eight”. It’s an expression to describe an activity that one returns to after previously failing at it. This beer definitely captures that spirit as there were times during the production where we thought this product might not see the light of day. Despite it’s bumpy road, the end result is a dark Saison with great aroma and complex taste.
