[Naming]
The Rokkasen series' concept is based around taking a fruit and expressing it in an IPA form, with the addition of fruit. The naming convention for the individual products literally refers to "果" ("ka") meaning fruit, and then a character representing the fruit or character. This time it is "檸" ("Nei"), which is also one of the two kanji used in 檸檬 (lemon).
[Brewer's Voice]
The goal with this beer is simple, to showcase lemon and citrus flavors. Taking that into mind I started with a very clean and simple malt base. Pilsner, wheat, and rice flakes were used to get a light and crisp malt profile that stays out of the way of the hop and fruit flavors. Speaking of hops a blend of Amarillo, Idaho 7, and Motueka were for their citrus characteristics. Amarillo is known for its flowery and tropical, yet often orange lemon citus characteristics. Idaho 7 has a bit more Juicy citrus flavors such as grapefruit and orange. Lastly, we are using Early harvest Motueka for its very distinct fresh lime character. To drive the Lemon character home, we condition this beer on dried lemon peels in the whirlpool and again on fresh lemon peels in the bright tank. This beer was fermented with California ale yeast to give it a clean dry finish. What is left is an incredibly bright dry citrus forward IPA.
