The collaboration beer brewed with Jamil Zainasheff from Heretic Brewing really couldn't have been a better experience. Not only did we get to brew with one of our heroes, but the buildup, brewing, and final execution of the beer ticked all the boxes for a perfect collaboration. The desire to try something new led us to tap into Jamil's extensive experience to use a technique new to us in order to make our first kettle sour here at Kyoto Brewing Co.. The inspiration for making the beer a uniquely Japanese taste experience came from shiso juice, a popular refreshing summertime beverage made from the leaves of the red shiso plant combined with vinegar and sugar. The incorporation of the shiso along with an addition of the tart juice of Japanese apricots exemplifies the theme of the collaboration so well as a beer, and the beautiful purple colour is the icing on the cake! We couldn't be happier with the way this beer turned out and can't wait to share it with you.

Naming: Nearly every child growing up in the West has surely come across the classic song from the 1950's called The Purple People Eater. While we grew up in slightly different generations, for some reason the topic came up with Jamil during the long night of drinking that followed the collaboration. A few too many beers spun the conversation in wildly different (and sometimes non-purple) directions that included internet searches that had us splitting with laughter. When we saw the gorgeous hue of the finished beer, we knew there could only be one name to capture its creation!
