春夏秋冬 - 秋 2017 (Shunkashuto - Fall 2017)

Shunkashuto ('Four Seasons') began as an attempt to brew a Saison that fit the season it was being released in.

This year's Shunkashuto Fall was designed to fit each aspect of this dichotomous time of year: the dog days of the Kyoto summer are fading and farmers across the country are beginning their harvests. Fruity Galaxy hops leave strong grapefruit and passion fruit flavours, while the Saison yeast lends an aromatic, peppery nose and a bone dry finish, both perfect complements to hot summer days. In a nod to the harvest season, 45% of the malt recipe is wheat, more than we have used in any previous brew, creating a refreshingly soft grainy flavour and mouthfeel. Regardless of whether it is the mid-afternoon heat or the cool late evening, this beer is a perfect fit!
