春夏秋冬 - 冬 2017 (Shunkashuto - Winter 2017)

The Shunkashuto (4-Seasons) Saison series gives us the freedom to try new things with each season, and for Winter 2017-2018 we chose to take full advantage of that by brewing a dark Saison featuring two types of rye malt. The base is made up of traditional Belgian Pilsner and Pale Ale malts allowing malted rye and one of our favorite new ingredients, crystal rye malt, to contribute a smooth mouthfeel and spicy pumpernickel like flavour and aroma. The dark colour comes from two types of specially roasted malts that have the husk of the grain removed to prevent astringency. The result is a nice balance of malt and yeast flavour, with hints of spice, dark bread, and licorice. We think you will agree that this is the most unique rendition of this series yet!
