Shunkashuto ("4 Seasons") began as an attempt to brew a Saison that fit the season it was being released in. The Spring version of Shunkashuto is a nod to the classic Saison. We paired traditional Belgian Pilsner malt with a bit of Vienna malt to create a slightly more complex malt flavour and fuller body. The flavour and aroma hops are 100% East Kent Goldings, a classic Saison hop. This combined with the dry finish and peppery yeast character make for a Saison that pairs well with the budding trees of Spring.
