春夏秋冬 - 秋 2018 (Shunkashuto - Fall 2018)

This year’s 2018 fall version of our seasonal Saison had a simple goal: crisp and dry drinkability perfect for cloudless autumn days paired with a complex yeast character to enjoy at the bar when the temperatures drop in the evenings. This beer leans heavily towards the classic interpretation of the style with the grain recipe being a simple blend of two types of Pilsner with 15% unmalted wheat added for a touch of extra body and complexity. Hops are 100% Czech Saaz, the classic lager hop, and they give the beer a touch of extra crisp drinkability without being overly strong. Finally, for the yeast we again looked to our beloved Belle Saison for that classic feel, but blended it with a high-temperature loving strain we introduced in Coming of the Harvest God. Pushing the yeast to its limits by fermenting at a sweltering 35C helped keep the beer very dry while at the same time balancing the complexity of the fermentation flavours and aromas of the usually dominant Saison yeast. The result is a unique fermentation character we haven’t seen with any other blends, including nuances of apple, pear, and peach. In short, a perfect fit for the season after a long hard day in the fields or a long hard night at the bar!
