不死鳥 (Phoenix)
While it is always fun to see what the latest craze will be within the IPA menagerie, it is safe to say that sometimes nothing can beat the classic American IPA that started it all. The pairing of Munich and lightly roasted crystal malt in this brew created a beautiful light orange colour that quickly became a favorite hue among the brewers. While we stuck mainly with the classic C hops of Cascade and Centennial, we also brought Simcoe into the mix, creating a complex layering of orange, mikan, grapefruit, and papaya aromas. The result is a classic American style IPA that we think stays true to the roots of the style regardless of how much it changes!
Naming: With the changing times and whatever the industry, it is true that new ideas and styles will come along. To resist it is to be in denial of the inevitable. Of the new beer styles that appear, some will flash brightly once before disappearing into the darkness, but others will be so good that they appear more as a fully fledged fire. When other styles come in, they may die down until they appear to be nothing but embers but they continue to smoulder. Then, when people get tired of the latest new idea on the market, they recall how wonderful that old classic was.
The classic American IPA is one of these styles that feels almost immortal. There may be times when people's focus shifts elsewhere but it is always there and, like the phoenix, it’s just a matter of time before it will rise again from the flames. This is our homage to the great undying bird.
