It isn't an exaggeration to say that without Saison Dupont, Kyoto Brewing Co. wouldn't exist. It is the beer that inspired our head brewer to become a brewer and the beer that each of our founders counts as one of their favorites. While we always knew that Ichigo Ichie would be part of our year round lineup, we also knew that it would not be our only Saison.

After a trip to Belgium and collaboration with Brussels Beer Project at the start of September, we felt inspired to brew a new saison. The yeast we used is a dry version rumoured to have its origins in the famous Dupont strain, and we decided to take a page from the Brussels Beer Project book and combine it with a dash of the more modern side of brewing. The malt is all Belgian, but instead of using spicy and earthy noble hops that are traditionally featured in Saison, we decided to use citrusy and tropical varieties to accentuate the fruity esters of the yeast. The result is a tart and refreshing beer that is bone dry but has a juicy hop character reminiscent of peaches and mangoes. We hope you enjoy our interpretation of a traditional classic!

Naming: The Saison style was nearly forgotten for many years as many traditional breweries is Belgium were being squashed by mass produced lager. It was saved by extinction by beer lovers in the United States and Japan among other countries who worked hard to find a market for the beer outside of its homeland. As it grew in popularity among brewers throughout the world, new brewing methods and ingredients were matched with this traditional brew, creating flavors and varieties that may never have been discovered in Belgium. Ishin Denshin communicates (denshin) this spirit of revival and restoration (ishin) as a modern interpretation of a classic style.
