A perfectly synchronised West Coast-inspired IPA

Getting it really right, and the different ingredients are seamless, without gaps, and almost like when a director plays the lead himself, with no need to verbalise his intent.[Brewer's Voice]The West Coast IPA is a classic. It changed the world's beer landscape through the creation of aromas through newly developed hops that had never existed up to that point. It became the standard IPA, and this still remains, although lots of sub-styles of IPA have since come and become all the rage.
While it's a classic, evolution is both necessary and to be embraced, and so we wanted to create an updated version.
We decided that simply increasing the hops wouldn't take the beer to where we needed it, and so reviewed our timing of hop additions, and our temperatures, to take them in a different direction to our WCIPAs to date. On the hot side, we took Columbus, Idaho 7, and Chinook, bringing citrus, resinous and dank characters, and a solid bitterness. On the cold side, Citra and Simcoe bring bright fruit notes of citrus with other tropical overtones.
