Our white winter wheat special, brought back for sipping on cold nights
[Character]A Belgian strong ale, offering the refreshing softness of wheat, and dry enough to keep the beer easy to drink despite the higher alcohol content[Naming]Winter for us used to mean deep powder, with memories from our Aomori days where the three founders originally met. News of a heavy snowfall on Mount Hakkoda was what we dreamt of on those cold winter nights, and so we fittingly named this Miyuki, meaning "deep snow".[Brewer's Voice]Miyuki used to be a staple in our lineup, the winter version of an easy drinking wheat beer named Nagoriyuki. It used the same base malt recipe, but the ABV was increased to 8.0% and made to envision what a wheat-based Tripel would taste like. It was a beer with a big punch of flavor and initially met with very warm reception. Over time, however, the popularity of the brew seemed to fade and we removed it from our yearly lineup.
We were excited to see that when we polled our jyosetsu customers recently, the number one beer they wanted to see brewed again was Miyuki. In a market where IPAs rule, it was really nice to know that there is still support for beers that aren't quite as flashy or well known.
We have made a few changes from the original recipe, mainly to combat two negative aspects that we found in some batches. Namely, the beer could feel too full and sweet, and sometimes had too much sulfur in the aroma. The changes have worked well, and produced the best release of Miyuki to date!
