[Naming]
The naming for this beer has two bases of origin. One is simple the fact that we are two breweries in Kansai cities with a rich and significant history, but more importantly, the towns that we are in and to which for many reasons we are indebted, is very important to us, and the ability to help support and contribute to our own backyard is something for which we are always striving. The second reason for the naming comes from a very old story of Nara Brewing's owner, Yasu. This isn't something we will share on here, but should you ever find yourself talking to either Yasu or one of the KBC founders, you might learn something that'll bring a smile to your face!
[Brewer's Voice]
This brew is a significant one for us, being the first of what will become a series within our "Nakama" collab series. For these beers, we are collaborating with former members of KBC who either moved on to work somewhere else, or started up their own breweries. Yasunori Namioka was at KBC from almost the beginning before venturing out to launch his own company.
For this collaboration, we wanted to share our love for dark beers. These beers can be some of my favorite on brew days, the roasted and chocolate malts on fill the air with warm biscuit and chocolate notes, it is quite wonderful! We wanted to lean on Nara Brewing style for the inspiration of this Milk Stout. A style known to be full bodied and have a depth of flavor, much of what contributes to that is the malt that is used, and this is one of the more complex Malt bills we have done. Base malt is made up of Maris Otter, then we used a blend of both flaked and malted oats and wheat for a nice creamy full body. A blend of black wheat, chocolate and pale chocolate malts were used giving the beer a soft but rich chocolate flavor with some Sinamar for that extra boost of color while keeping the bitterness low. Conveniently Nara brewing likes to use some similar malts for stouts as us, so this is a great fusion of our styles. We went a bit crazy on the cols side with this one, and really wanted to give you a dessert style beer. Some coffee was used to round out the soft chocolate flavors giving the beer a mocha like characteristic, some vanilla was added to soften up the beer and contribute to even more of a creamy character. Lastly, we added a very small amount of coconut as a not-so-secret ingredient to give just a bit of depth to the sweetness on the finish of the beer. This beer is an after dinner treat for your senses.
