Blurring the line between beer and cocktails, this pineapple margarita-inspired beer is an impactful but refreshing flavour sensation

A sea salt Gose brightened up with pineapple, lime and chilies. This beer blends sweet, sour, and just a little spice, in one light and drinkable package, inspired by the delicious Pineapple Margarita cocktail.
[Naming]
The Japanese name of this beer is a play on the name of the fire prevention warnings that go around neighbourhoods. The fire is replaced by sun, with the idea of this being a bit of a beach cocktail, and one with both a bit of heat from the chili to boot. It might be a little too easy to forget time when sitting back and drinking this one, so don't forget your sun cream!

This was a beer made in collaboration with Nude Brewing, and the recipe was conceived with Joko-san (nicknamed "JK"), a former Kyoto Brewing member of many years, and one of our first employees. While chatting with JK, we discussed the idea of making beers, one at KBC and one at Nude, inspired by cocktails. On our side, we decided on brewing a Pineapple Margarita-inspired beer. We decided on the Gose style as a base since the salt typical in the style suits itself well for flavors found in margaritas. The base beer was kept simple with just pilsner, wheat and oats to give the beer body, but to keep the malt flavor clean and neutral to allow the other flavors to stand out more. To start to turn this beer into a cocktail, it began in the kettle. True to Gose style, sea salt was added in the kettle, mimicking the salt on the rim of a margarita glass. Often Tajin, a blended spiced salt, is used with fruit margaritas to balance out the sweet fruit flavors. We wanted to go after this flavor and in doing so we used a blend of both red chili powder and dried guajillo peppers with sea salt to give the beer a nice subtle amount of spice and smoke character without making the beer spicy or smokey. Some Strata and NZ Cascade were added to accent the tropical pineapple and citrus lime flavors we were after. Next was the fruit. A blend of Pineapple and Lime juice was used during fermentation to add some tart citrus flavor while lowering the Ph to make the beer more refreshing. During cold conditioning we added some more pineapple flavor and dried guajillo peppers into the beer to brighten up those flavors just before packaging. This beer hits every part of the pallet, giving you sweet, salty, and a bit of smoke and spice all in one sip! It makes for a wonderful treat to the senses and was an incredibly fun beer to make!
