春夏秋冬 - 秋 2019 (Shunkashuto - Fall 2019)

This year’s Shunkashuto Fall is sure to please hop lovers and yeast lovers alike. The malt recipe is classic Saison but goes a tiny bit heavier on the Vienna malts to leave a bit more mouthfeel and sweetness for the hops to play upon. The Belle Saison yeast really came through nicely this time, with hints of apricot and peach, both of which play perfectly with the special hop combination we chose for this year’s fall seasonal Saison. HBC 344 is an experimental hop we first played with way back in September 2016 and we love its wacky green apple, tropical fruit, almost durian like character. We paired this with Callista, a German hop we have used several times in the past with a a very mellow apricot, peach, and passion fruit character and really ties the hops in with the yeast. Kanpai to the end of dog days of summer!
