[Naming]
When Mosaic hops came along in 2012, they were another major factor in the surge in demand for "the next new hop". Beyond nuances of citrus, all kinds of tropical fruit stood out within there, like a patchwork of different colours all within a single hop, that varied depending on how the hop was used. Looking back on this gave us the image of a supernova, which is also not completely unlike the impact this hop had on the industry, either!

It has always been difficult for us to feel like we are getting the most out of this unique hop, so this brew was created as a way to challenge ourselves to overcome that and put forth the best sides of Mosaic that we can.

We utilized three different types of Mosaic hops at different times in the brewing process to try to get the best out of each application. Mosaic hop extract was used in the whirlpool to get as much of its oils into the wort as possible. Pellets (both traditional T90 and Cryo) were then used in dry hopping to add more berry, sweet fruit, and tropical notes to the beer.

The result is a wide-ranging expression of the unique characters of Mosaic hops in a dry and drinkable IPA.
