Mid to late summer gives us a great opportunity to play around with new ingredients between our summer and fall Kimagure brews. As we received a load of new hops from the 2015 hop harvest in late spring, we thought this would be a great time to try some of these new hops out.
The first hop we wanted to play around with was Mosaic, a relatively new hop exploding with tropical and fruity flavors. We also decided to feature something else with this beer, our assistant brewer Yasunori Namioka. While our head brewer writes most of the recipes and then asks Yasu for his feedback, with this beer we decided to flip the table and let Yasu take the lead in creating the recipe. The result is a highly aromatic, easy drinking IPA with just enough malt backbone to support the heavy load of hops.
About the naming: Within Tokumei Kibou (or "name withheld by request"), the main hop that characterizes the beer was mosaic. In Japan, "mozaiku" ("mosaic" in Japanese phonetics) is also used to describe the pixelation of images used to hide the identity of a person. As you read the name of the beer, you may have thought "what does this name mean!?" In a similar way, we felt people could pick up the beer, try it and wonder "what hop is this!?". Rather than giving a name that will give you a preconception of what you'll experience, we thought you may enjoy more drinking the beer while pondering the many different images and characters that these hops can conjure.
