乳糖恐怖症 (Lactophobia)

A creamy, full bodied tropical IPA, with strawberry-like sweet aroma

Hazy soft and creamy malt base with tropical strawberry and sweet fruit hop character in this sweet and full-bodied tropical IPA.
[Food Pairing]
Strawberry and burrata or mozzarella cheese salad, marinated with herbs and olive oil, beef tagliata with a cranberry balsamico sauce, pork shoulder with leeks and "kurozu" black vinegar sauce.
[Naming]
Our head brewer, and perhaps our brewery in general, has always had a bit of an aversity towards lactose. This is partly because we feel it has become over-used, most heavily in styles such as dessert stouts and milkshake IPAs. The reality is that there's nothing wrong with it really, so long as it's in its correct place. But then again, phobias are irrational aren't they? In working with Totopia, known for their juicy and hazy IPAs using lactose, we felt this was a good time to face this fear! But just a little, please...
[Brewer's Voice]
Brewed in collaboration with Totopia, we knew we wanted to capture a bit of each of our essence in this beer. Totopia is no stranger to big fruit-forward, full-body beers, so we wanted to play a bit in that space and add some of our own flair to it as well. A good friend of mine comes from a long line of hop growers who founded Puterbaugh Farms in Washington. Puterbaugh Farms is responsible for the hop known as “Belma”. This hop was bred from US Magnum and Japanese Kitamidori Hops, and is known for its unique Strawberry shortcake-like character when used in beer. I wanted to lean into this hop’s unique character and really craft the beer around those flavors, utilizing some of Totopia’s process along the way. This beer uses a hefty amount of flaked oats and wheat as well as a mix of unfermentable sugars to give it a robust and sweet body, paired with the soft character of maris otter malt. The beer is predominately hopped with Belma hops and a touch of Sabro, and Belma's strawberry combines with the coconut from the Sabro to really drive home that creamy soft dessert-like character. Fermented with strawberry puree, and conditioned with a touch of vanilla, this beer has plenty of layers of complexity in its flavor.
